Beer cheese is a traditional Kentucky cheese spread made with cheddar cheese‚ spices‚ and beer. There are many versions of the origin of beer cheese‚ but its actual beginnings seem to date back to the 1940s in Clark County‚ Kentucky.

Throughout Kentucky‚ ”Beer Cheese ” is offered on restaurant menus as an appetizer‚ served with carrots‚ celery‚ apple slices and various crackers.

The pairings with beer cheese have become numerous and creative. One of the more popular combinations is the ”heated” version‚ 20 seconds in a microwave‚ and served with pretzels. Beer Cheese also makes a wonderful warm condiment for hamburgers‚ hotdogs‚ brat wurst and tortilla chips.

KC’s KickAss Mac ’n’ Beer Cheese

  • 4 Tablespoons butter
  • ¾ Cup panko bread crumbs
  • 8 oz. Cooked elbow macaroni
  • ½ Cup all purpose flour
  • 1 ¼ Cups milk
  • 8 oz. of Original KC’s KickAss Beer Cheese (any of the three flavors)
  • 1 Cup shredded mild cheddar cheese
  • 1 Teaspoon salt
  • ½ Teaspoon black pepper
  • Makes 16-18 servings. (1) Serving: Calories 170
  1. Heat oven to 375 degrees. In a small microwavable bowl, microwave 1 tablespoon of butter uncovered on high 15-30 seconds or until melted. Stir in bread crumbs‚ set aside for later.

  2. Cook and drain macaroni as directed on package.

  3. Meanwhile‚ melt remaining 3 tablespoons of butter in 9" x 11" casserole dish. Stir in flour with a whisk. Add salt and pepper. Stir in cooked macaroni while it is hot.

  4. Add 8 oz. of beer cheese, stir until blended. Add milk and shredded mild cheddar cheese, stir until blended. Top with bread crumb mixture.

  5. Bake 35-40 minutes or until hot and topping is golden brown. Cool 5 minutes‚ with an ice cream scoop, dip and scoop macaroni into foil regular size baking cups. If left in the baking dish it can be served as a casserole.
